  • 1 cup fine rice flour
  • 1 cup water
  • Pinch of salt
  • 1 tsp ghee
  • Filling: 1 cup grated fresh/thawed coconut, ¾ cup crushed jaggery, ½ tsp cardamom powder, 1 tbsp poppy seeds (optional)

Method

  1. Cook coconut + jaggery on low heat until it dries slightly (5-7 min). Add cardamom. Cool.
  2. Boil water with salt and ghee. Add rice flour off heat, stir vigorously into a soft dough. Cover and rest 10 min.
  3. Knead dough with wet hands until smooth. Divide into 12 balls.
  4. Flatten each ball, place 1 tsp filling in center, pinch to close forming pointed top (traditional modak shape).
  5. Steam 10-12 min in idli or bamboo steamer. Serve warm with ghee.

2. Fried Modak — Longer Shelf Life

Same filling as ukadiche but with a wheat-flour outer layer, deep-fried. Perfect for the day-1 offering that keeps 3-4 days.

Ingredients

  • 1½ cups all-purpose flour
  • 2 tbsp ghee
  • Pinch of salt
  • Water as needed
  • Same coconut-jaggery filling as above
  • Oil for frying

Method

  1. Rub ghee into flour + salt. Add water gradually to form a firm dough. Rest 20 min.
  2. Divide into 15-18 small balls. Roll each into a thin 4-inch disc.
  3. Place filling in center. Pleat + pinch top closed.
  4. Deep fry on medium heat until golden brown, 3-4 min each side.
  5. Cool on paper towel. Store in airtight container up to 4 days.

3. Chocolate Modak (Kid-Approved Modern Adaptation)

The recipe that gets Indian-American kids invested. Chocolate + cardamom is a legitimate flavor pairing.

Ingredients

  • 1 cup semi-sweet chocolate chips
  • ½ cup milk powder
  • ¼ cup crushed jaggery or brown sugar
  • ¼ cup melted ghee
  • 2 tbsp cocoa powder
  • ¼ tsp cardamom powder
  • 2 tbsp chopped nuts (almond/cashew)

Method

  1. Melt chocolate chips over double boiler. Off heat, mix in ghee.
  2. Add milk powder, cocoa, jaggery, cardamom, nuts. Mix into a firm fudge.
  3. Cool 10 min. When still warm but pliable, shape into modaks using a silicone modak mold (Amazon, ~$10) or by hand.

  • 1½ cups whole milk powder
  • 1 can (14 oz) sweetened condensed milk
  • ¼ cup ghee
  • ½ tsp cardamom powder
  • Chopped pistachio for garnish

Method

  1. Heat ghee in nonstick pan. Add condensed milk. Add milk powder gradually while stirring.
  2. Cook 6-8 min until mixture pulls away from sides.
  3. Add cardamom. Cool slightly.
  4. Grease modak mold with ghee. Press dough in. Release. Garnish with pistachio.

5. Coconut-Ladoo Modak (No Cook, No Fry)

Ingredients

  • 2 cups desiccated (dry) coconut or frozen fresh coconut
  • 1 can (14 oz) sweetened condensed milk
  • ½ tsp cardamom powder
  • 2 tbsp ghee

Method

  1. Heat ghee in pan. Add coconut, sauté 2 min.
  2. Add condensed milk + cardamom. Cook 5-6 min until it forms a firm mass.
  3. Cool 5 min. Shape into modaks by hand or with a mold.
  4. Optional: roll in additional dry coconut for texture.
